Christmas Cascara from the Czech roastery The Naughty Dog is a beautifully aromatic seasonal drink made from dried coffee cherry skins. Although cascara comes from the coffee plant, it is not coffee. Instead, the dried fruit skins are brewed like tea, creating a naturally fruity, gently sweet and warming drink.
This festive blend combines Costa Rican cascara with aromatic Ceylon cinnamon, dried orange peel, cornflower and jasmine. The result is a wonderfully festive cup filled with notes of cinnamon, gingerbread, dried orange, hibiscus and violet-like florals.
It is a perfect choice for coffee lovers as well as anyone who prefers tea and other warming drinks. Enjoy it as a cosy hot drink during winter or prepare it cold for a refreshing summer version.
What is cascara?
The word cascara means "husk" or "peel". In this case, it refers to the dried skins of coffee cherries.
When coffee cherries are processed and the coffee beans are removed, the fruit skins remain as a by-product. Instead of being discarded, they can be carefully dried and used to make cascara. The dried skins are naturally sweet, fruity and aromatic, creating a drink that sits somewhere between herbal tea and a fruit infusion.
Cascara is therefore not coffee — it is a tea-like beverage made from the fruit surrounding the coffee bean.
A festive blend from Costa Rica
The base of this Christmas cascara is made from 97% dried coffee cherry skins from Costa Rica, sourced from traditionally and sustainably managed farms.
The cascara is complemented by a carefully balanced combination of warming spices and botanicals:
- 97% dried coffee cherry skins
- 1.1% Ceylon cinnamon
- 1.1% dried orange peel
- 0.5% dried cornflower
- 0.3% jasmine
The cinnamon and gingerbread-like sweetness give the blend its cosy festive character, while dried orange adds a gentle citrus freshness. Cornflower and jasmine bring delicate floral aromas, while the natural fruity acidity of the cascara adds brightness and balance.
How to prepare Christmas Cascara
For the best flavour, we recommend:
15 g cascara + 200 g water at 98°C
Steep for 10 minutes
This produces a rich and aromatic infusion that is sweet, fruity and warming without becoming too heavy.
Christmas Cascara can also be prepared as an iced cascara tea, making it a versatile drink that can be enjoyed throughout the year.
